My name is Perry Mascitti. I am the Exec. Chef at Tulalip Resort Casino. I was asked to do a four course dinner at the FareStart restaurant on August 28th. I like the look of your Spinach Pappardelle and have heard great things about your quality. I would like to make it one of the components of my entree halibut course. The dinner will be for 250 people and would like to use about 2oz, or about 2-3 noodles per plate. Which means I will need about 35# prepared fresh for me.
If possible, I would like to pick up a couple of pounds of this fresh spinach pappardelle to work out the final plate design and maybe meet someone who will be taking care of my larger order in August.
